You say Potato...

I love to cook in the morning, on the weekends... or in the evenings during the week... but mostly anytime. These potatoes are a healthy, taste bud waking alternative to the usual "hash brown". It's a recipe that I've been making for a few years but it seems as more time passes,  I add more and more to it. 


It started off with just your average potato and onion mixture, grilled on the range and served with toast and either egg or tofu scramble. 


BUT NOW, this potato breakfast delight could stand as a meal itself if it had to.. (sometimes it has too!) 



The base is onion. Lots and lots of onions. Then potatoes, garlic and some hot green peppers. 





I saute the onions until they are translucent and then I add the potatoes along with a dash (or more, who's watching?) of salt and pepper. Fry them in a tablespoon of olive oil for about 10-15 minutes. (I'm not exact, I guess it depends on the amount of heat you use).

From here I add yellow and red peppers, the spicy green pepper, black beans, corn if I have a small can on hand and then pepper. 


And that's breakfast, or lunch, or dinner... Did I mention that this could moonlight as a dinner?
